Cooking with Matcha: Matcha Avocado Gelato

Hello teatime fans and welcome to the much awaited beginning of Spring! As the weather finally starts getting warmer, we all look forward to refreshing new snack ideas to break up the working day.

 

Gelato is originally an Italian treat, but it’s popular worldwide thanks to its unique consistency, flavour and versatility.

 

Traditionally, Gelato contains eggs and lots of refined sugar, so we’ve decided to create a vegan and gluten-free alternative that doesn’t compromise on taste! Our signature Matcha Avocado Gelato is a unique combinations of flavours, and you’ll be surprised how well they mix together. It’s also super easy to make - try it out at the weekend and you can store it in the freezer for a long time after!

 

Ingredients:

 

2 teaspoons teatime premium matcha powder

1 large ripe avocado

1 teaspoon of ginger flakes

250 ml almond milk

200 ml coconut milk

4 tablespoons coconut sugar

1 tablespoon lemon juice

1 pinch of sea salt

2 teaspoons vanilla extract

3 tablespoons of manuka honey (add more if you have a sweet tooth)

 

Method:

 

Simply put all the ingredients in a blender and turn on until you obtain a smooth mixture. Pour in a bowl and place in the refrigerator for a minimum of 4 hours. Put the mixture in an ice cream maker and switch on the paddle for about 15-20 minutes. The Gelato can be served immediately, or stored in the freezer for several weeks.
